Lately, we've been running into a problem here. My internal clock is all messed up and I suddenly realize I haven't started dinner yet about 10 minutes before we should be eating. To combat this issue, I decided to break out the slow cooker.
They've been a little lonely hanging out in the pantry while I play with new recipes and try to figure out this whole Paleo baking without almonds thing – which I so do not have the hang out yet. If anyone else with an almond allergy has figured out grain-free baking, please let me know! I really can't figure out a good pie crust and crustless pie just isn't doing it for me!
Anyway, getting back to the dinner dilemma, (although I'm sure my rambling has shown you exactly why I'm having trouble getting dinner started on time – SQUIRREL!) I decided that some easy slow cooker recipes that I can start in the morning before my brain goes on overdrive would help and I was right!
Today I want to share a super easy and delicious slow cooker Paleo Chicken Soup or stew with you. I used to make this all the time, then I did some intensive food allergy testing and found out chicken was causing part of my health issues (autoimmune sucks!) so I ditched all my chicken recipes.
A couple of weeks ago, I remembered that turkey & chicken are really similar and tried this one out with turkey. It tastes great either way, but chicken is much cheaper and I can only find boneless, skinless turkey breast at one store here.
Slow Cooker Paleo Chicken Soup
Start by cutting your chicken (or turkey) into cubes, then put them in the crockpot. If you don't have a crockpot, I highly recommend this one! It works great for my larger family and has a locking lid so you can take it to family dinners without any mess!
Now, time to get busy cutting. Dice the onions & potatoes. Slice the carrots & celery. Throw them in the crockpot. Mince some garlic and add it in too. You can also cheat and use the jarred minced garlic. I always keep one in the fridge for when I'm in a big hurry (or feeling a little lazy!) to save time.
Add your chicken stock, water, and any herbs your family enjoys. I like to add a teaspoon of dried sage, about 1/2 tsp dried thyme, salt, and pepper, so I put that in the printable recipe below, but don't be afraid to play around with your own favorites!
Paleo Slow Cooker Chicken Stew
This Paleo slow cooker chicken stew will have your family raving and only takes about 15 minutes to throw together!
Ingredients
- 2 pounds uncooked cubed Chicken Breast
- 2 large Carrots
- 2 stalks Celery
- 1 Onion
- 2 cloves Garlic
- 2 Tomatoes
- 6 medium Potatoes
- 2 cups Chicken Stock
- 4 cups Water
- 1 teaspoon sage (dried)
- 1/2 teaspoon dried thyme
- salt and pepper to taste
Instructions
- Place the cubed chicken in the slow cooker.
- Dice the carrots, celery, onion, tomatoes, and potatoes.
- Add them into the slow cooker.
- Mince the garlic cloves and add them in as well.
- Pour the chicken stock and water over the ingredients in the slow cooker.
- Add in the sage, thyme, salt, and pepper.
- Cook the stew on low for 6-8 hours.
- Serve warm.

Thanks so much for this recipe!!! I’m allergic to wheat (the whole thing not just gluten) and rice, which means most chicken soup recipes I find I have to sub in corn pasta – which is very expensive. My daughter is sick so I’ve been searching for a”feel better” soup for her. This will feed us both! ❤️
