Ingredients

  • 3 cups powdered sugar
  • ⅔ cup cocoa powder
  • 4 egg whites
  • 1 cup chocolate chips
  • 1 tsp vanilla extract
  • Pinch of salt

How to Make Flourless Double Chocolate Fudge Cookies

Preheat oven to 350 degrees F.

Line a cookie sheet with parchment paper and set aside.

In a large bowl, combine cocoa, powdered sugar and salt.

Whisk until blended.

Add in vanilla and egg whites, whisking just until combined.

Stir in chocolate chips.

Using a tablespoon or large cookie scoop, scoop the cookie batter onto a prepared baking sheet, leaving 1-2 inches in between.

Bake for 13-15 minutes or until the tops of the cookies have a glazed look and are slightly cracked.

Allow the cookies to cool completely on the baking sheet before removing them. For best results, do not transfer them to a wire rack for cooling.

Store in an airtight container for up to 3 days.

What is the texture of these flourless fudge cookies?

These fudge cookies are a combination of the edge pieces of the brownies and a meringue cookie. If you want the cookies to be crispy, you will want to eat them the day they are made. For a chewier cookie, you want to eat them the next day or over the next 2 days.

While there are times that aquafaba can be used in place of egg whites, that is not the case in this recipe. The cookies will not come out right. In this case, you will need to use egg whites in order to make these flourless cookies.

Can I use other dry ingredients?

These cookies can be easily altered for allergies, by swapping one dry ingredient for another. Switch out the powdered sugar for powdered Swerve or your other favorite powdered sweetener and use sugar-free chips for low-carb/keto. Use dairy-free chocolate chips, like Enjoy Life. You could use dark chocolate, chocolate chunks, or white chocolate chips instead of the standard milk chocolate chips. You could even cut up one of your favorite chocolate bars and use that in place of the chocolate chips.

I wouldn't recommend using brown sugar or regular white sugar in this recipe though to get the right consistency.

How do you store fudge cookies?

You want to store these cookies in an airtight container or in a plastic freezer bag. The cookies can be stored at room temperature.

This cookie dough is not like traditional cookie dough. Since it does not have flour in it, it is more of a runny cake batter so it doesn't have that normal cookie form. When you freeze cookie dough, you typically scoop it into cookie dough balls. This cookie dough does not do that because of the consistency. If you want to freeze them, you need to make them first.

How long can you store these cookies?

When these cookies are stored properly, they will last for about 5 days when protected from the air. You can also move the baked cookies to the freezer and they will last about 3 months.

Can fudge cookies be made ahead of time?

If you need to make these cookies ahead of time, since you can not freeze the cookie dough, you can make the cookie dough up to 3 days before you are ready to bake them. Once the cookie dough is ready, cover it well with plastic wrap. Place it in the refrigerator. When you are ready to bake the cookies, simply remove it from the refrigerator. You might notice that it is a little harder to scoop but this is normal.

Can you freeze the baked flourless cookies?

Once the flourless cookies are baked, you can freeze the cookies. The baked cookies can be placed in the freezer once the cookies are cooled. These cookies are deliciously chewy once they are taken from the freezer. Some people say they are delicious eaten straight from the freezer, even before they are thawed.

Can I use a whole egg instead of egg whites in this recipe?

You do not want to use a whole egg in this recipe. Because these cookies do not have flour in them, which means they lack gluten to hold them together, you need the extra protein of using egg whites. Egg yolk has a lot of fat, which changes the texture of the cookies and the batter will not hold up or keep its shape when baking.
