Paleo Meal Plan Monday – Week of 1/1

Meal planning is the number one way to take control of your budget and make sure you are eating a healthy diet, regardless of what types of food you are eating. Skip the last minute temptation to order pizza by planning everything out in advance, grocery shopping for only what you need, and then sticking to it! This week's Paleo meal plan features pancakes, waffles, homemade protein bars, zoodles, stuffed sweet potatoes, and more!

Even if you aren't strict Paleo (or Paleo at all!), I can guarantee you will find some delicious recipes here to try out!  Unless you are vegan, then you might have an issue since we eat a lot of animal products in this house.  You might be interested in some of the smoothie recipes I share though since I don't do dairy.

Paleo Meal Plan Monday

Before we jump straight into the delicious recipes, I wanted to share my definition of Paleo because I know there are so many different ideas on what it really means. Paleo to me means: No grains (which includes corn – no, it's not really a vegetable), no refined sugar (honey & molasses are okay in moderation), no soy, no legumes (which includes peanuts, but green beans & peas are fine), and no dairy. Veggies are the primary food group, meat, nuts & seeds, healthy fats, and fruit.  All REAL food that tastes delicious and fuels the body without causing inflammation.

Remember to respect your body.  If something makes you feel off every time you eat it, remove it from your diet.  I had food sensitivity testing done a few years ago and it made a huge difference.  Now, I substitute turkey for chicken in recipes & feel so much better!  Most grocery stores sell boneless, skinless turkey, which makes my life so much easier!

Paleo Breakfast Recipes:

Paleo Pumpkin Pancakes – These light fluffy pumpkin pancakes are delicious all year round! Topped with coconut butter and a drizzle of maple syrup!

Tumeric Chia Pudding – Tumeric and chia are featured in this delicious pudding. You can eat it for breakfast or for a mid-day snack.

Butternut Squash Frittata – This hearty frittata is packed with protein and will sure to keep you full all morning!

Sweet Potato Bacon Waffles – These hearty waffles have a ton of fiber thanks to the sweet potatoes, and the bacon gives it a little sweet/salty kick.

3-Ingredient Banana Pancakes – 3- ingredients make these banana pancakes the easily pancakes to whip up in the morning! These are a must add to your paleo meal plan often!

Corned Beef Hash Breakfast Skillet  – Breakfast skillets are a great way to serve breakfast using just one pan. This corn beef hash breakfast skillet features eggs, riced cauliflower, and of course corned beef.

Mocha Protein Bar – If you need a great paleo breakfast on the go, this mocha protein bar is just the ticket. Dates, almonds, and mocha powder make these bars super tasty.

Paleo Lunch Recipes:

Sweet and Spicy Chicken – Just because you prefer Paleo, doesn't mean you can't have your favorite Chinese dishes. This sweet and spicy chicken tastes just like takeout but without all the extra ingredients!

Paleo Burger Bowl – This burger bowl features ground beef, lettuce, tomato, and more! It's like your favorite burger recipe but in a bowl.

Spaghetti Squash Chow Mein- Spaghetti squash is an easy and delicious alternative to traditional pasta noodles. This spaghetti squash chow mein has an Asian twist perfect for when you are craving takeout.

Teriyaki Chicken Zoodles- This recipe features coconut aminos for a paleo version of “teriyaki”. Sweet and tasty on a bed of zoodles, it's great for lunch or dinner.

Paleo “Corn Dog” Muffins- These paleo corn dog muffins doesn't have a lick of corn in it. Almond and coconut flour make a delicious breading around the uncured hot dogs. It'll taste just like you remember as a kid, but paleo style.

Chili Stuffed Sweet Potatoes- Stuffed sweet potatoes are a great way to spice up regular sweet potatoes. This is comfort food at its best.

Turkey Pot Pie Soup– Turkey pot pie soup takes all the yummy ingredients in your favorite pot pie, and makes them into a deliciously easy soup!

Paleo Snack Ideas:

Paleo Cinnamon Roll Smoothie –Coconut milk, banana, apple, honey, and cinnamon are what gives this cinnamon roll smoothie its zing!

Vegan/Paleo Peppermint Mocha Frappuccino– This is a paleo copycat version of what is served at your local coffee shop, but this one is vegan, paleo, gluten-free, and dairy free!

Crockpot Chunky Monkey Trail Mix – Walnuts, cashews, coconut flakes, and of course bananas and paleo fudge chunks make up this delicious trail mix!

Cinnamon Sugar Pumpkin Donut Holes – Just because  you eat paleo doesn't mean you can't have delicious things like donut holes! These cinnamon sugar pumpkin donut holes are so easy and delish!

Paleo Key Lime Pie Energy Balls – Medjool dates sweeten these delicious citrus key lime energy balls!

Paleo Apple Muffins – Snacks on the go are great when your life is busy. Granny Smith apples give these hand sized muffins a tart twist!

Paleo Dinner Recipes:

Paleo Pork Carnitas – Just throw these pork carnitas in the crockpot, and dinner is done!

Lemon Rosemary Chicken – This lemon rosemary chicken is great because it's a one pot meal with a side of sweet potatoes!

Mexican Zucchini Skillet – This dish would be delicious with some fresh guacamole!

Coconut Curry Thai Meatballs – Serve these meatballs on top of some riced cauliflower, yum!

Spicy Shrimp with Cauliflower Mash and Kale – This dish has spice, creamy textures, and kale!

Slow Cooker Gumbo – Make sure to leave out the cut up sausage to make this paleo friendly!

Asparagus Sweet Potato Chicken Skillet – This skillet is one pan meal! Delish!

Paleo Dessert Recipes:

Raw Chocolate Pomegranate Tart – This is a great no bake recipe the kids will love!

Paleo Lemon Cookies – A fun, zingy cookie even filled with some superfoods!

Chocolate Banana “Fudgesicles” – These will remind you of fudgesicles from your childhood.

        Paleo Blueberry Cobbler– This would be delicious topped with some homemade coconut ice cream.
