Meal Plan Monday

Going Paleo doesn't have to mean eating the same things constantly or missing out on your favorite desserts.  This week's Meal Plan Monday focuses on delicious Paleo recipes that will make your mouth water!

I'm doing great on Paleo still, but had fallen off the meal planning wagon.  In order to keep my budget in check and not be tempted to stray (why are there no Paleo delivery restaurants yet?!?), I'm getting back into the swing of things. This week, I noticed Hy-Vee had pears and spareribs on sale, so I knew I wanted to work both into our meal plan.

As always, I do a complete meal plan (Breakfast, Lunch, Snack ideas, Dinner, and a few desserts), so feel free to skip to the sections you plan.  I HIGHLY recommend PlanToEat.com (free 30-day trial) to compile your recipes for the week, adjust to the number of servings you need, and print your grocery list.

Paleo Breakfast Recipes:

Paleo Breakfast Muffins – I'll be making a large batch of these to freeze for later too

Breakfast Cookie Dough Balls – The boys will LOVE having cookie dough for breakfast. No need to tell them it's good for them

Paleo Breakfast Pizza – Pizza for breakfast is one thing I've missed, so this will help curb those unhealthy cravings!

Cinnamon Vanilla Paleo Muffins – I LOVE muffins and miss my cinnamon apple muffins, so this should be a big hit.

Paleo Scotch Eggs – I've never had Scotch Eggs, but these look delicious!

Twice Baked Breakfast Sweet Potatoes – These are on the menu for breakfast, but I may end up doing them for dinner sometime in the future!

Loaded Paleo Breakfast Hash – I may have to tone this down a little better to get one of my boys to eat it.

Grilled Cheese on Coconut Flatbread with homemade tomato soup – Have to find a good goat's cheese for this or maybe some almond cheese!

Cauliflower Crust Stromboli – Lots of different filling options for this!

Prosciutto-wrapped Mini Frittata Muffins – Make a large batch and freeze for later!

Tuna Cucumber Cups – The kids will have a lot of fun helping make these!

Loaded Paleo Nachos – Might do these with beef instead of chicken though.

Bacon-wrapped Chicken Strips – Bacon just makes everything taste better.

Paleo Taco Bowls – You can also do this as a skillet.

Zucchini Bread Truffles

Paleo Pretzels – If you aren't following a Paleo version, I like these ones from MomsNeedToKnow.com a little better (even though we disagree on the best way to eat a pretzel!

Salt & Pepper Zucchini Chips

Red Velvet Protein Bites

Asian Marinated Spare Ribs (in the crockpot)

Chicken Paillard with Asians Pear & Cashew Salad – I may use regular pears for this since they are on sale

Zucchini Noodle Asian Stir-fry with Shrimp – Invest in a good spiralizer. I use this one (the 4 blade)

Sweet Potato Sloppy Joes – Might add some raw veggies or a salad

Balsamic Glazed Steak Rolls with grilled veggies

Paleo Fish Tacos with Spicy Cabbage Slaw

Salmon & Zucchini – Serve with cauliflower rice
