Paleo Meal Plan Monday – Week of January 25th

Meal planning is the number one way to take control of your budget and make sure you are eating a healthy diet, regardless of what types of food you are eating. Skip the last minute temptation to order pizza by planning everything out in advance, grocery shopping for only what you need, and then sticking to it!

Even if you aren't strict Paleo (or Paleo at all!), I can guarantee you will find some delicious recipes here to try out!  Unless you are vegan, then you might have an issue since we eat a lot of animal products in this house.  You might be interested in some of the smoothie recipes I share though, since I don't do dairy.

Paleo Meal Plan Monday

Before we jump straight into the delicious recipes, I wanted to share my definition of Paleo because I know there are so many different ideas on what it really means. Paleo to me means: No grains (which includes corn – no, it's not really a vegetable), no refined sugar (honey & molasses are okay in moderation), no soy, no legumes (which includes peanuts, but green beans & peas are fine), and no dairy. Veggies are the primary food group, meat, nuts & seeds, healthy fats, and fruit.  All REAL food that tastes delicious and fuels the body without causing inflammation.

Paleo Breakfast Recipes:

Sausage & Sweet Potato Breakfast Casserole – This one looks really filling and delicious!

Paleo Breakfast Bread – Make the batter for this the night before for a quick and delicious breakfast!

Smoky Sweet Potato & Bacon Breakfast Bowl –  Anything with sweet potato & bacon makes my must-try list!

Smoked Salmon Stack – I'm a huge fan of smoked salmon for breakfast & this just loves divine!

Bacon & Tomato Frittata with Basil – Is there anything better than the combo of tomato & basil?!?

Warm Coconut Banana Breakfast Bowl – I'll be honest here. I MISS oatmeal and other hot cereals.  This looks like it will help fulfill that craving for me.

Anti-Inflammatory Blueberry Smoothie – I happen to disagree with some of the items in her top 10 anti-inflammatory foods (found out more here), but definitely agree on the blueberry!

Paleo Lunch Recipes:

Asian-Style Meatballs with Green Papaya Salad – I'm not sure which of these recipes look better, but we're going to try them both for a filling lunch!

Bacon Balsamic Vinaigrette over Roasted Butternut Kale Salad – Leave out the feta cheese for Paleo.  I'm going to try dried cranberries instead of pomegranates.

Steak & Sriracha Lettuce Wraps – An easy one-pot Paleo lunch!

Thai Mint Chicken Stir-Fry – Another easy one-pot Paleo recipe!

Spicy Cinnamon Lamb Steaks – This one only takes about 20 minutes to throw together, so it's great for an easy lunch. Serve with a salad or some steamed veggies for a complete meal.

Rosemary Salmon with Orange Zest – Serve with roasted broccoli!

Paleo Greens & Ham Hocks – This could also be a side dish for dinner.

Paleo Snack Ideas:

Paleo Marshmallow Smoothie – There isn't really marshmallows in this smoothie, but it's light an fluffy like one!

Blueberry Coconut Oil Bites – Her recipe is actually for raspberry but I'm trying it with freeze-dried blueberries this time!

Probiotic Rich Berry Fruit Leathers – I'm a huge fan of fermented foods & this is an easy way to sneak some more into our diet! Guess I need that dehydrator earlier than my birthday now!

Bacon Wrapped Avocado – Change the brown sugar to coconut sugar & these are a delicious Paleo treat!

Raw veggies with Paleo ranch – This is a quick & easy snack, especially if you whip up a large batch of Paleo Mayo at the beginning of the week!

Baked Sweet Potato Fries with Chipotle Mayo – Here's another reason to whip up a batch of mayo every week!

Egg Salad Boats – A quick, easy, and healthy snack you can even eat on the run!

Paleo Dinner Recipes:

Haddock over Beet Puree – This might not sound that appetizing since it's a puree, but all four of my boys just LOVE it! I love how healthy it is!

Sloppy Joe Sweet Potatoes – These are a staple at our house! The boys request them every couple of weeks and I never mind whipping up a batch!  Make a few extra sweet potatoes for an easy side dish the next day!

Baked Chicken with Roasted Veggies – The veggies will cook in the slow cooker and I can just pull one of my dump chicken recipes from the freezer in the morning.

Spicy Cinnamon Blackened Salmon – The salsa on this one looks amazing.  I think I'll serve it with some leftover roasted veggies!

Steamed Garlic & Herb Scallops with Veggies – If you haven't tried scallops yet, this is a great time to start!

Creamy Lemon Basil Spaghetti Squash – This helps satisfy my pasta cravings and gives me a meatless night recipe!

Blueberry Mint Balsamic Salmon – This just looks gorgeous!  Serve with steamed veggies and cauliflower rice!

Paleo Dessert Recipes:

Blueberry Cream Pie – This looks amazing and I've been drooling over it for weeks now!
