Paleo Meal Plan Monday – Week of January 11th

Meal planning is the number one way to take control of your budget and make sure you are eating a healthy diet, regardless of what types of food you are eating. Skip the last minute temptation to order pizza by planning everything out in advance, grocery shopping for only what you need, and then sticking to it!

Even if you aren't strict Paleo (or Paleo at all!), I can guarantee you will find some delicious recipes here to try out!  Unless you are vegan, then you might have an issue since we eat a lot of animal products in this house.  You might be interested in some of the smoothie recipes I share though, since I don't do dairy.

Paleo Meal Plan Monday

Before we jump straight into the delicious recipes, I wanted to share my definition of Paleo because I know there are so many different ideas on what it really means. Paleo to me means: No grains (which includes corn – no, it's not really a vegetable), no refined sugar (honey & molasses are okay in moderation), no soy, no legumes (which includes peanuts, but green beans & peas are fine), and no dairy. Veggies are the primary food group, meat, nuts & seeds, healthy fats, and fruit.  All REAL food that tastes delicious and fuels the body without causing inflammation.

Paleo Breakfast Recipes:

Cinnamon & Coconut Pancakes – I have a delicious applesauce pancake recipe, but this will be a nice change!

Spaghetti Squash Breakfast Casserole – I'll cook up the spaghetti squash the night before or pull some out of the freezer for this one. I'm all about quicker recipes in the morning until my coffee kicks in.

Chocolate Waffles – She has these labelled as a dessert, but I know my boys would love me all day if they got these for breakfast!  I'm not a huge chocolate fan so I'll eat leftovers for breakfast.

Sausage & Butternut Squash Frittata – We always have leftover butternut squash in the fridge that I can use to throw this together easily!

Chorizo, Apple, and Kale Breakfast Bowls – This recipe only serves one but would be so easy to whip up in a larger batch for the kids for a healthy & filling breakfast.

Orange Blueberry Muffins – These look light like muffins should and I love the combo of citrus and blueberry!

Cinnamon Roll Smoothie – I've made this several times & everyone loves it!

Paleo Lunch Recipes:

Prosciutto, Melon, and Spinach Salad – I'm a huge fan of easy salads that will fill everyone up, like this one!

Spicy Butternut Squash & Chard – This one is quick, easy, and full of flavor!

Basil, Avocado, and Chicken Salad – I'm trying this with turkey and might add some grape tomatoes.

Zucchini Pine Nut & Cranberry Pasta – This easy pasta looks so delicious!  Hoping the boys will like the crunch from the pine nuts in it!

Asian Meatballs – Serve with steamed broccoli and raw bell pepper strips.

Kale Salad with Bacon & Fig Vinaigrette – This is a filling salad that everyone will love!

Little Pig Pasta – I'm so grateful my older two boys finally eat mushrooms, but now that means sharing delicious recipes like this with them!

Paleo Snack Ideas:

Graham Crackers with nut butter – We always have some cashew butter on hand, but you can use your favorite nut butter.

Coconut Lime Cupcakes – This recipe is in grams, so you'll have to do a little converting. I'm going to play with an almond free version, so hopefully I'll have my own variation for you soon!

Raspberry Coconut Oil Bites – These are more for me than the kids, since they are a metabolism booster, but I'm guessing they'll like them too.

Paleo Fried Pickles – Not exactly a super nutritious snack, but you have to satisfy those cravings somehow!

Tuna in Cucumber Cups – Now these little guys pack quite the nutritional punch!  Tuna really is brain food and so important for growing children (and adults)!

Salt & Pepper Zucchini Chips – We've made these several times & they are always a hit!

Celery with nut butter & raisins – Ants on a log with cashew/almond butter instead of peanut butter.

Paleo Dinner Recipes:

Chilean Salmon with Avocado Cream Sauce – We tried this last year, but I forgot to save my notes on how I changed it. I remember every liked it though!

Turnip & Beet Pot Roast – This is one of my favorite recipes & I mess around with the different root veggies every time I make it.

Pork Chops – I have a few different pork chop recipes frozen in the freezer, but make whatever sounds best to you.  Serve it with these Sweet Potato Stacks (omit the parmesan for Paleo) and a mixed green salad.

Rustic Herbed Skillet Chicken – This is a one-skillet dish, so it's great for a busy night when you don't want a ton of dishes to wash!

Braised Oxtails – This will be my first time making Oxtails so wish me luck!

Shepherd's Pie – I prefer to make this with the traditional lamb instead of ground beef!

Garlic & Dill Salmon – Serve with steamed broccoli and baked sweet potato!

Paleo Dessert Recipes:

Paleo Sex in a Pan – 6 layers of Paleo delicious goodness & your family will never notice there is no sugar in it.

Lemon Blondies – She calls them brownies, but I think they classify as a blondie instead.  No matter what you call it, they look so good!

Apple Cinnamon Muffins with Maple Vanilla Frosting
