This Margarita Cupcakes Recipe is perfect for your New Year's party! Grab these, and pass them around for the toast of the party. They are also a nice treat for anytime you really just need a little “me time”, to just sit down, relax and take the whole world in. You can really glam these up by serving them in jewel colored margarita glasses, and garnishing them with a wedge of lime fruit slice and a pretzel as a straw.
Spiked Margarita Cupcakes Recipe
Ingredients
FOR THE CUPCAKES
- 1 and ½ cups all-purpose flour
- 1 tsp baking powder
- 1 stick salted butter (softened)
- 1 cup granulated sugar
- ¼ tsp salt
- 2 large eggs
- ¾ cup buttermilk (milk + 1 tsp vinegar, let sit for 5 minutes)
- 1 large lime juiced
- Tequila
- Lime zest
- Green sprinkles
FOR THE FROSTING
- ½ cup salted butter (softened)
- 8 oz cream cheese (softened)
- 4 ½ cups powdered sugar
- Tequila (optional, drizzle on top)
- 1 large lime juiced
Instructions
- Preheat oven to 350 and line muffin pan with liners.
- In a separate bowl, mix together the flour, baking powder, and salt. Set aside.
- Using a mixer, beat together the butter and sugar.
- Add in eggs one at a time.
- Add in the buttermilk, lime juice, and tequila.
- Add dry ingredients into wet ingredients.
- Add cupcake batter into cupcake liners.
- Bake for 15-20 minutes. Let cool.
- Prepare the frosting by creaming together the cream cheese and butter with an electric mixer.
- Add in the powdered sugar slowly and then add in the lime juice.
- Using an apple corer or a filling tip for a pastry bag, inject in the tequila.
- Frost cupcakes and garnish with a drizzle of tequila, sprinkles, and lime zest.
