Easy Chicken Salad with Lemon and Poppyseed

Making chicken salad is one of those things every home cook learns.  This easy chicken salad recipe is an upscale take on a classic. By adding a bit of lemon juice, mustard, and poppy seeds, you have created a new experience that makes a simple sandwich completely different.  This one is truly kid tested and mother approved.

Ingredients for Easy Chicken Salad Recipe

  • 3 Baked, Grilled, or Rotisserie Chicken Breasts, Cubed
  • 1 Medium Green Apple, Diced
  • 2-3 Green Onion Stalks, Chopped
  • 1/4 c. Pecans, Chopped
  • 1/2 c. Mayonnaise
  • 1-1/2 T. Honey
  • 1-1/2 T. Lemon Juice
  • 1 T. Dijon Mustard
  • 1 t. Poppy Seeds
  • 1/2 t. Onion Powder
  • Pinch of Salt

Directions for Easy Chicken Salad Recipe

Mix mayonnaise, honey, lemon juice, Dijon mustard, poppy seeds, onion powder, and salt in a medium mixing bowl and stir to combine.

Add diced chicken, green apples, pecans, and green onions and stir to combine.

While I would serve this on lettuce cups to stay gluten-free, you may like this on a great crusty bread.  Baguettes, French bread toast, or even a nice whole grain toast are all excellent for this.  Sometimes, I even have enjoyed this on a nice multi-grain cracker. To make it Paleo, use a Paleo mayo and serve on lettuce cups (adjust nutritional info if using paleo mayo).  I like Primal Kitchen's Mayo for when I don't have any homemade on hand and this Paleo Mayo recipe from The Healthy Foodie.
