Paleo Taco Stuffed Sweet Potato Recipe
Tacos are always a family favorite, but when you are on a Whole30 diet, shells are out. Many people just miss out on those delicious taco flavors, but good news: you have options! Taco salads are awesome (and low carb!) but when you cut out grains, you may find yourself eating salad pretty often.
Last year, I ran across a delicious recipe for Sloppy Joe Stuffed Sweet Potatoes that we all fell in love with. Even my picky eating nephews will ask for me to make it whenever they are here for dinner! It got me thinking, what other delicious things could I turn into a stuffed sweet potato? These Taco Stuffed Sweet Potatoes were the delicious results!
Taco Stuffed Sweet Potato
Everyone knows that kids typically love taco flavored items. That goes for me too when it comes to favorite foods. It is so easy to customize a taco flavored item, and of course, it is going to be a favorite when you put this on the table for your kids. A stuffed sweet potato allows you to get your kids to eat more nutrient-dense items, while being easily able to stick to your own preferred Paleo or Whole 30 dietary needs.
Ingredients:
4 sweet potatoes, cut lengthwise
1 lb ground beef (grass-fed if possible)
1 red bell pepper, diced
1 Tablespoon Chili Powder
1 teaspoon ground Cumin
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon salt
Additional salt and pepper to taste
fresh lettuce, shredded (optional)
Avocado, chopped (optional)
Tomatoes, chopped (optional)
Salsa (optional)
Cilantro (optional)
Directions:
Preheat oven to 350 degrees F. Place the sweet potatoes (cut lengthwise) face down on a baking sheet. Brush the backs with olive oil and sprinkle on salt and pepper. Place in the oven for 30 minutes.
While potatoes are cooking, place ground beef in a large skillet and cook on medium-high heat, until browned. Add in spices and diced red pepper. Cook until bell pepper softens (3-4 minutes). Add a few tablespoons of water if needed to keep the meat from drying out.
To serve – use a fork to flatten the inside of the roasted potato slightly. Add the desired amount of ground beef mixture and top with fresh lettuce, chopped tomatoes, avocado, salsa, and cilantro.

I love being able to make a meal that is easy for the whole family. Baked sweet potatoes are easy to use as a carrier for other flavors, and if you want to plan ahead, you can even easily bake them in large batches and have ready to grab and load up at meal-time later in the week. In fact, sweet potatoes are a favorite easy to prep ahead meal item!
