Pumpkin Spice Irish Coffee
This cosy fall drink is one of my favourite ways to settle in when the weather starts to cool off. It’s warm, creamy, and full of those classic pumpkin spice flavours that make autumn feel extra comforting. The mix of hot coffee, Irish cream, and homemade whipped cream comes together so easily. If you love pumpkin season as much as I do, this one’s a treat.

There’s something about this drink that feels perfect for quiet evenings or slow weekends. It’s simple to make and adds a little warmth to the end of the day.
And according to my husband, Baileys Irish Cream is a common way for parents to start Christmas. Even though Pumpkin Spice Everything season is over by then, I still think this will be a delicious way to start the day this year – followed by present opening, a delicious meal, and family games/movies.
Pumpkin Spice Irish Coffee
This version uses easy pantry spices, fresh hot coffee, and a bit of Irish cream to bring everything together. It smells amazing as it brews and tastes even better.

Ingredients
Homemade Whipped Cream:
- Heavy whipping cream
- Real maple syrup
Pumpkin Pie Spice:
- Cinnamon
- Ground ginger
- Ground nutmeg
- Ground allspice
- Ground cloves
Pumpkin Spice Irish Coffee:
- Pumpkin pie spice
- Freshly brewed hot coffee
- Irish cream
- Extra pumpkin pie spice for topping
- (Optional) Pre-made whipped cream
Instructions

Whip the heavy cream in a mixing bowl until it starts to thicken.

Drizzle in the maple syrup and keep whipping until it’s light and fluffy.

Stir together all the spices to make your pumpkin pie spice blend.

Sprinkle a little of the spice blend over your coffee grounds and give them a gentle shake.
Brew the coffee as you normally do.

Pour Irish cream into each mug, then add the hot coffee.

Top with whipped cream and a small sprinkle of extra pumpkin pie spice.

Storage
Homemade whipped cream is best the same day, but it will hold in the fridge for a few hours. The spice blend can be stored in an airtight jar for several weeks.
Pro Tips
- Use freshly brewed strong coffee for the best flavour.
- If you prefer less sweetness, use only a small drizzle of maple syrup in the whipped cream.
- You can make the spice blend in a bigger batch and save it for other fall recipes.
Variations
- Add a splash of vanilla syrup for a sweeter version.
- Swap Irish cream for bourbon or spiced rum for a different twist.
- Use pre-made whipped cream if you’re short on time — it still tastes delicious.

- 16 oz Freshly brewed hot coffee
- 8 oz Irish cream
- Additional pumpkin pie spice for garnish
- Pre-made whipped cream optional substitute
Instructions
- Whip the heavy cream in a large bowl until it doubles in size.1 pint Heavy whipping cream
- Drizzle in the maple syrup and whip until light and fluffy.2 Tbsp Real maple syrup
- Set the whipped cream aside.
- Combine all pumpkin pie spice ingredients in a bowl and stir.3 Tablespoon Cinnamon, 1 Tbsp Ground ginger, 1 Tbsp Ground nutmeg, 1 tsp Ground allspice, 1 tsp Ground cloves
- Set the spice mix aside.
- Sprinkle the coffee grounds with pumpkin pie spice before brewing.1 Tbsp Pumpkin pie spice
- Gently shake to mix the grounds.
- Brew the coffee as usual.16 oz Freshly brewed hot coffee
- Pour 2 oz Irish cream into each mug.8 oz Irish cream
- Top with 4 oz freshly brewed coffee.
