Homemade Bean Burritos

My kids love burritos. It's a quick & easy lunch for them, but I'm not a fan of the price tag or extra ingredients in them. These homemade bean burritos are super easy to make & fun to customize!

Homemade Bean Burritos

One of my favorite freezer recipes is bean burritos – they are so versatile and only take about 2 minutes to warm up in the microwave. They are also rich in iron and increase dietary fiber.

This recipe is for your basic homemade bean burrito. I modify this recipe and add beef, chicken, peppers, onion…basically whatever sounds good that day!

You can even make a bunch of different kinds at once. Whip up your fillings, place in bowls, and let the kids help customize their own – just remember to make what's in each kind or do a separate bag for each kid!

Ingredients for Homemade Bean Burritos

  • Pinto Beans – Instructions on making your own beans are included in the recipe card. You can use canned beans, but homemade taste so much better & are better for your budget!
  • Cumin
  • Smoked Paprika
  • Chili Powder – We use regular chili powder most of the time but I also have a hot chili powder that I sometimes add.
  • Shredded Cheddar Cheese – Play around with different cheeses. We do sharp, medium, extra sharp, or a mix of cheeses.
  • Medium Flour Tortillas

How to Make Homemade Bean Burritos

How to Cook Beans in the Slow Cooker

  1. Place 1 pound dry beans in the slow cooker.
  2. Cover with 6 cups of water
  3. Stir in 2 teaspoons garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, and 1 teaspoon black pepper.
  4. Cover and cook on high for 4-5 hours.

How to Make Bean Burritos

  1. Pour beans, cumin, paprika, and chili powder into a large skillet.
  2. Using potato masher mash beans until most are pureed with only a few small chunks remaining.
  3. Heat the mixture over medium heat for 4-5 minutes adding cheese in right before you turn off and remove from heat.
  4. Allow the filling to cool.
  5. Spoon ½ Cup of the bean mixture onto the center of the tortilla.
  6. Fold tortilla over bean mixture and roll to form a burrito.

How to Freeze Homemade Bean Burritos

  1. Wrap with plastic wrap covering the burrito completely.
  2. Place plastic-wrapped burrito onto the center of an aluminum foil sheet.
  3. Wrap this over the burrito, creating secure second layer protection from freezer burn.
  4. Place wrapped burritos into a labeled gallon-sized freezer bag and freeze lying flat.

How to Reheat Burritos

  1. Remove from freezer.
  2. Remove aluminum foil and plastic wrap and place on the center of a microwave-safe plate.
  3. Heat on high for 60 seconds then rotate and heat for an additional 60 seconds or until heated through.

You can also reheat them in the oven, which is what we prefer to do when making them for lunch. Preheat the oven to 375 and bake for 25 to 30 minutes, or until warm completely through.

  • Pour beans, cumin, paprika, and chili powder into a large skillet.
  • Using potato masher mash beans until most are pureed with only a few small chunks remaining.
  • Heat the mixture over medium heat for 4-5 minutes adding cheese in right before you turn off and remove from heat.
  • Allow to cool.
  • Place tortilla on a large piece of plastic wrap (enough to cover burrito and wrap securely).
  • Spoon ½ Cup of the bean mixture onto the center of the tortilla.
  • Fold tortilla over bean mixture and roll to form a burrito.
  • Wrap with plastic wrap covering the burrito completely.
  • Place plastic-wrapped burrito onto the center of an aluminum foil sheet. Wrap this over the burrito creating secure second layer protection from freezer burn. Place wrapped burritos into a labeled gallon-sized freezer bag and freeze lying flat.
  • TO REHEAT
  • Remove from freezer. Remove aluminum foil and plastic wrap and place on the center of a microwave-safe plate. Heat on high for 60 seconds then rotate and heat for an additional 60 seconds or until heated through.

Notes

Always rinse your beans before cooking them!
