Sorry I haven't posted our meal plan in a while. I fell off the weekly meal planning wagon for a bit, but things are back under control! This week, I knew I was going to be busy working on curriculum planning (will be posting ours soon!) and pulling up the old carpet in 2 rooms so I spend a day prepping to throw almost everything into the freezer for the week.
Dinner Recipes:
Shrimp Scampi over linguine with glazed carrots and spinach salad.
Wine & Herb Chicken with roasted asparagus & squash
Beef Brisket with mashed potatoes, gravy, baked beans, and cucumber salad.
Roasted Chicken & Veggies in the crockpot.
Garlic & Herb Pork Chops with corn on the cob, fresh green beans, and watermelon.
Stickin' Chicken with rice & stir-fry veggies.
Dessert Recipes:
Peanut Butter Cake
We don't do dessert on a daily basis, so I normally make a smaller batch of these recipes or find ones that freeze easily. I'm going to try freezing the PB cake this week and see how well it thaws next week. What is your favorite make-ahead dessert?
