Slow Cooker Chicken Teriyaki

It’s not always easy to plan dinner each night, especially when you are tired of cooking the same thing over and over again. This Slow Cooker Chicken Teriyaki is made in a slow cooker so it doesn't take any time or effort on your part but still tastes amazing. It's one of our favourite slow cooker chicken recipes!

This recipe is my original Slow Cooker Chicken Teriyaki. When I'm cooking for my extended family, I tend to turn to Paleo recipes because they eliminate many of my sibling's food allergies. If you can't do soy or prefer Paleo recipes, you have to try Paleo Slow Cooker Chicken Teriyaki Lettuce Cups for a couple of easy tweaks and serving suggestions.

Slow Cooker Chicken Teriyaki

Ingredients

  • boneless skinless chicken breasts
  • soy sauce
  • raw honey
  • garlic
  • onion
  • ground ginger
  • red wine vinegar
  • dash of pepper
  • cornstarch
  • water
  • rice – Optional

How to Make Slow Cooker Chicken Teriyaki

Place chicken breast, onions, and garlic into the slow cooker.

In a small bowl, combine soy sauce, honey, ginger, vinegar, and pepper.

Pour mixture over chicken, and turn the chicken to make sure it's coated in sauce.

Place lid on top, cook on low for 8 hours or high for 5 hours.

Remove chicken from the slow cooker and use 2 forks to shred. Set aside.

In a small bowl, mix the cornstarch and water.

Pour mixture into sauce in the slow cooker, cover, and cook on high for 30 minutes*. The sauce will thicken up.

**Alternatively, if you don't want to wait 30 minutes for the sauce to thicken, you can pour the sauce into a small saucepan and then add the cornstarch slurry, bring to a boil and then simmer a few minutes. This will thicken up the sauce in 5 minutes or less.

Once the sauce has thickened, return the chicken to the slow cooker and stir to coat.

Serve over rice or your favorite side dish.

Is Chicken Teriyaki Healthy?

With some chicken teriyaki recipes while most of the ingredients are healthy, once you add the sauce, it tends to take that away because it is loaded with processed sugar.

With this recipe, you are not using a sugary sauce. The teriyaki sauce and flavor is all made from scratch. The sugar component of the sauce is made using honey.

Another way to keep this recipe healthy is to use a low salt soy sauce. Traditional soy sauce is full of sodium and this is not good for you on many levels. Using the low sodium version is a much better option.

Can Vegetables Be Added to This?

You can absolutely add veggies to this recipe. Any type of stir fry vegetable will be perfect. Some of my favorites are broccoli, peppers, asparagus, and snap peas. Be sure to add the vegetables towards the end of cooking because you do not want them to get too mushy from overcooking.

Can You Cook RIce in the Crockpot?

You can certainly make rice in the slow cooker. However, you should not make the rice in the same slow cooker, at the same time as the chicken teriyaki. I personally do not recommend making rice in a slow cooker because it certainly takes a long time, but it can be done.

I think it is best to make rice in a rice cooker or in an Instant Pot using the rice setting. Or on the stovetop, depending on how much time and stove space you have available.

Can You Freeze This Recipe?

Yes, you can freeze this recipe. In fact, I recommend freezing the chicken teriyaki in a freezer bag or a large freezer container. I sometimes freeze this in small individual size portions so that I can come back and grab some for an individual meal, like for lunch or when the kids are hungry.

When you are ready to eat it, thaw it out in the fridge overnight. Then you can reheat it in the microwave or on the stovetop in a small saucepan.

What to Serve with Chicken Teriyaki

Rice is the go-to when it comes to a side to this recipe. It goes hand in hand together as the perfect meal. Thin noodles are also a great tasting choice.

Cauliflower rice is a great option if you are looking for an alternative to rice if you are looking for a lower-carb option. Zoodles is another low-carb option.

This is a great recipe because it uses a slow cooker that makes cooking a breeze. You can get everything together in the morning and come home to a delicious-smelling house with little effort on your part.

You can easily add more vegetables to this recipe. It is a great way to get vegetables into your diet with this amazing recipe. Sauteed broccoli is perfect but cauliflower also works. A side of asparagus is also a great choice. Consider oven-roasted bok choy as a side dish. A bag of stir fry vegetables can easily be added towards the end of the cooking process.

Salad is always a simple and easy option to make as a side dish. A salad with shredded cabbage instead of lettuce is one of my favorite sides for chicken teriyaki.

My slow cooker is my favorite kitchen gadget.  Well, gadgets.  I have a few of them and each serves a different purpose. My go to is this 6 qt Crock-Pot. I love the locking lid and programming options.  I use this for practically everything but have a 8 qt Hamilton Slow Cooker for when we have guests or I'm doubling larger recipes for the freezer.

  • lettuce wraps romaine or bibb lettuce work well
  • sesame seeds optional

  • Pour mixture over chicken, and turn the chicken to make sure it's coated in sauce.
  • Place lid on top, cook on low for 8 hours or high for 5 hours.
  • Remove chicken from the slow cooker and use 2 forks to shred. Set aside.
  • In a small bowl, mix the arrowroot powder and water.
  • Pour mixture into sauce in slow cooker, cover, and cook on high for 30 minutes*. The sauce will thicken up. **Alternatively, if you don't want to wait 30 minutes for the sauce to thicken, you can pour the sauce into a small saucepan and then add the arrowroot mixture, bring to a boil and then simmer a few minutes. This will thicken up the sauce in 5 minutes or less.
  • Once the sauce has thickened, return chicken to slow cooker and stir to coat.
  • Serve in lettuce cups with a dash of sesame seeds on top.
