Paleo Meal Plan Monday – Week of 1/8

Paleo Meal Plan Monday

I love meal planning! It is the number one way to take control of your budget and ensure you are eating healthy, regardless of what types of food (Paleo, vegan, keto, etc) you are eating. Skip the last minute temptation to hit a drive-thru by planning everything out in advance, grocery shopping for only what you need, and then sticking to it! It's so much easier to do than you might think with my favorite meal planning tools! This week's Paleo Meal Plan has a few Paleofied breakfast recipes, several delicious chicken recipes, a lemon curd, Paleo chips, and brownies!

Paleo Meal Plan Monday

Even if you aren't strict Paleo (or Paleo at all!), I can guarantee you will find some delicious recipes here to try out!  I don't have any picky eaters (except 2 of my kiddos don't like mushrooms and some are weird about avocado), but I normally have a couple “picky eater” recipes planned for if I have one or more of my nephews.

As always, I do a complete meal plan (Breakfast, Lunch, Snack ideas, Dinner, and a few desserts), so feel free to scroll down to the sections you plan.  I HIGHLY recommend PlanToEat.com (free 30-day trial) to compile your recipes for the week, adjust to the number of servings you need, and print your grocery list. It makes things super easy and saves a ton of time!

Paleo Meal Plan Monday

Before we jump straight into the delicious recipes, I wanted to share my definition of Paleo because I know there are so many different ideas on what it really means. To me Paleo means: No grains (which includes corn – no, it's not really a vegetable), no refined sugar (honey & molasses are okay in moderation), no soy, no legumes (which includes peanuts, but green beans & peas are fine), and no dairy. Veggies are the primary food group, meat, nuts & seeds, healthy fats, and fruit.  All REAL food that tastes delicious and fuels the body without causing inflammation.

All of our Paleo meal plan Monday posted are based on these basic principles. However, some recipes have optional add-ins or toppings that aren't Paleo (just leave them out) and sometimes I'm a bit tired when planning and completely miss an ingredient in the recipe that's crucial and not okay.  If that happens, please let me know 🙂

Paleo Breakfast Recipes:

Sweet Potato Breakfast Bowls – Sweet potatoes make this breakfast bowl super creamy. Topped with blueberries for additional yum!

Paleo Twice Baked Sweet Potatoes – Sweet potatoes, eggs, and bacon look delish in this recipe!

Paleo Raspberry “Pop Tarts”– Just like the Pop Tarts you might've had as a kid, but better AND Paleo Friendly.

Maple Pecan Banana Breakfast Bake– This looks like a fun and flavorful breakfast recipe!

Baked Avocado and Egg – This is a simple two-step breakfast! Delicious!

Instant Paleo Apple Cinnamon Hot Cereal – Hot cereal is a great breakfast, especially on cold winter mornings!

Paleo Cinnamon Roll in a Mug – This recipe takes just two minutes in a mug!

Paleo Lunch Recipes:

Paleo Chicken Salad – Change this recipe up with some cubed turkey! It would be great on a paleo friendly wrap too!

Paleo Shrimp and Avocado Salad – Toss this on some riced cauliflower for a complete lunch.

Paleo Beef and Brocolli – Like your favorite Chinese takeout, but paleo friendly!

Avocado Tuna Boats – I'll serve these along with a small salad.

Teriyaki Chicken Lettuce Wraps– These lettuce wraps look great, but I'd substitute turkey for the chicken.

Curried Cauliflower Rice Kale Soup – This would be delicious for lunch or dinner!

One Pan Shrimp Fajitas – Serve with some delicious cauliflower rice!

Paleo Snack Ideas:

Pan Fried Cinnamon Bananas – Use coconut oil instead of butter to make this paleo compliant.

Paleo Peanut Butter Protein Bars – Make sure to use paleo compliant chocolate chips for this yummy treat! We use Enjoy Life chocolate chips!

Paleo Lemon Poppy Muffins – These would be delicious spread with delicious coconut butter.

Herbed Casava Tortilla Chips – These dipped in homemade guacamole would be amazing!

Easy Paleo Pita Chips – Great with any paleo friendly dip!

Almond Butter Blueberry Muffins – Make a large batch of these and throw the extras in the freezer for when you need them!

Paleo Dinner Recipes:

Paleo Crockpot Turkey Chili – Served with paleo pita chips or baked sweet potatoes!

Paleo “Corn Bread” Chili Pie–  This recipe is comfort food at it's finest!

Shepherd's Pie with Roasted Veggies – Just because you went Paleo doesn't mean you have to give up casseroles!

Paleo Bacon Garlic Burger – These fresh off the grill would be delicious!

Sheet Pan Chili Lime Salmon – This would be great on top of riced cauliflower!

Sweet Potato Cheeseburger Casserole – I'd use bone broth in this recipe to make it more paleo friendly!

Mushroom Bacon and Cauliflower Casserole – This casserole looks amazing!

Paleo Dessert Recipes:

Easy Chocolate Hazelnut Paleo Butter Cups – 3 Ingredient recipe is so easy to make!

Paleo Lemon Curd – Bright and deliciously creamy!

Paleo Brownies – Just because you eat Paleo now doesn't mean you have to give up brownies!
