Spaghetti squash is one of the most versatile vegetables out there.  Not only is it healthy, it can easily be transformed. It absorbs flavor easily, and strings like pasta so can be the base for many dishes, including a gluten and grain free pasta dish!  That's why we love this easy spaghetti squash recipe that includes a light herbed flavor that is so versatile.  You can easily make this a side dish, a base for a sauce, or a bed for grilled meats!  Plus, it is a great affordable option for anyone trying to eat healthier!

To start making this easy spaghetti squash recipe, you will cut your spaghetti squash in half lengthwise.  Scoop out the seeds and then you will want to put in the microwave to heat through so you can scrape the insides out easily.

Some people prefer to put the squash in a baking dish with water, but I found that a simple microwave safe plate works just fine.  Microwave in 5-minute increments until soft and easy to scoop out.  The average medium spaghetti squash will take around 15 minutes.

Once you have it soft enough to scrape out the insides, you'll want to heat your butter in a skillet or saute pan and then scoop the squash directly into the skillet.  Add your desired herbs, and cook on medium heat for 5-7 minutes or until flavors have been absorbed.  Fresh herbs are always the best, but dried herbs will also bring out the great flavor for this dish.

Ingredients

  • 1 medium size spaghetti squash 2-3 lb
  • 2 tbs. butter
  • 2 tbs. parsley
  • 2 tbs. chives
  • 2 tbs. oregano
  • salt & pepper to taste

Instructions

  • Slice squash in half lengthwise and remove seeds.
  • Place on microwave safe plate or dish and heat in 5-minute increments at high heat in microwave until inside is tender.
  • Heat a skillet or saute pan to melt butter.
  • Using a fork, scrape insides directly into skillet.
  • Add in herbs as desired (above mix or your preferred herbs)
  • Cook on medium heat for 5-7 minutes or until browned and seasonings have mixed throughout.

Notes

If you can't tolerate dairy or are following a Paleo (or Vegan) diet, you can substitute your favorite fat for the butter. I've used duck fat, bacon grease, ghee, and refined coconut oil before with great results.
