Breakfast Meal Planning

As part of our transition to a healthier lifestyle, we are planning all our meals & snacks instead of winging it for everything but dinner. I will be posting our breakfast, lunch, and snack meal plan here. Our dinner & dessert meal plans can be found on AThriftyTable.com.

Breakfast Recipes:

Overnight oatmeal

Breakfast burritos

Baked apples with Greek yogurt

Spinach & mozzarella frittata in the crockpot

Lunch meal plan

Lunch Recipes:

Taco salad

Taco meat, lettuce, tomato, onion, avocado, salsa, shredded cheese, salsa, sour cream, and crushed taco chips

Sloppy Joes

My favorite recipe is from The Pioneer Woman

Sausage & peppers

1 c. onion, 1 c. zucchini or yellow squash, 1 can diced Italian-style tomatoes, 1  1/2 c. peppers, 1 Tbsp Italian seasoning, 1 can tomato sauce, 1 clove garlic (minced), 1 Italian sausage ring

 Mini Pasta cups

Cooked pasta, marinara or spaghetti sauce, ground beef crumbled, shredded cheese

BBQ Chops with coleslaw & baked beans

Pork chops in crockpot with BBQ cause, shredded cabbage & carrots with coleslaw dressing, favorite baked bean recipe (or can)

Mac & Cheese with hot dogs

 Use your favorite recipe (or box) of macaroni & cheese, cook & cut up hot dogs to stir in, serve with cut veggies & dip

Soup & Sandwiches

This week, we are doing tomato soup with Pesto & Tomato grilled cheese sandwiches.

Snack Ideas:

Ants on a log

Celery with peanut butter and raisins

Lady bugs

English muffin toasted and spread with pesto, topped with mozzarella, tomato, and diced black olives.

Cheese & crackers

Apples with yogurt dip

Frozen grapes & cheese cubes

Pretzel sticks & dip

Veggies & hummus
