I love flavored breakfast drinks, and this blueberry almond milk smoothie is a great idea. It’s little more than a flavored milk recipe, but since the fruit adds texture, I like to call it a smoothie. Not only does it pack a powerful punch of antioxidants in the blueberries, the almond milk is high protein for brain development. It is an ideal breakfast drink for the kids!
Blueberry Almond Milk Smoothie
It is officially fresh blueberry season where I live, and I love stocking up on this flavorful berry to use in an easy almond milk smoothie for breakfast, or even a fast snack. I tend to be the type that prefers to freeze fresh fruit rather than can it, but you can grab some canning jars and can these berries for pies and even to use in smoothies if you prefer. I go for the easiest method which is packing them away in vacuum freezer storage bags.
If you, like me, want convenience in the kitchen, it doesn’t get any better than this. I like to add a few extra things into my smoothies, but the basic recipe is seriously easy to make and takes just a couple of minutes. I just pour unsweetened almond milk, blueberries, and a bit of coconut or almond slivers into the blender and let it puree (the boys drink almond milk, but I use cashew milk instead). That’s it! Super easy and absolutely delicious!
1.25 cups almond or cashew milk
1 cup frozen organic blueberries
optional: 1 tablespoon almond slivers, 1 tablespoon raw coconut flakes
Wash the berries and toss into the blender. Pour the almond milk over the berries and let them rest together for a couple minutes. Blend on medium for about 30 seconds or until the berries are smooth and the milk is frothy. Enjoy right away to avoid separation or shake thoroughly later when ready to drink.
My kids love drinking an almond milk smoothie for breakfast because it feels like a special treat. Including antioxidant-rich blueberries and protein rich almond milk helps me to give them something delicious and healthy that also fits easily into my Paleo diet.
