Paleo Meal Plan Monday – Week of 1/15

Meal planning is the number one way to take control of your budget and ensure you are eating healthy, regardless of what types of food (Paleo, vegan, keto, etc) you are eating. Skip the last minute temptation to hit a drive-thru by planning everything out in advance, grocery shopping for only what you need, and then sticking to it!  This week's Paleo Meal Plan has an easy breakfast bake and muffins, quick & easy lunch recipes, paleo pretzels, salmon, my favorite skillet dinner, and three slow cooker recipes to make dinner a breeze!

Paleo Meal Plan Monday

Even if you aren't strict Paleo (or Paleo at all!), I can guarantee you will find some delicious recipes here to try out!  Unless you are vegan, then you might have an issue since we eat a lot of animal products in this house.  You might be interested in some of the almond milk smoothie recipes I share though.

Paleo Meal Plan Monday

Before we jump straight into the delicious recipes, I wanted to share my definition of Paleo because I know there are so many different ideas on what it really means. Paleo to me means No grains, no refined sugar, no soy, no legumes, and no dairy. Veggies are the primary food group along with meat, nuts & seeds, healthy fats, and some fruit.  All REAL food that tastes delicious and fuels the body without causing inflammation.

Paleo Breakfast Recipes:

Italian Spaghetti Squash Breakfast Bake  – Breakfast bakes are great to feed big or small crowds.

Breakfast Egg Muffins – Leave out the cheese to make these easy egg muffins Paleo compliant.

Grain Free Banana Nut Muffins – Spread nut butter or coconut butter on these, and yum!

Caramelized Apple Dutch Baby – Dutch babies are like a pancake, popover, crepe, but this one is more leaning towards frittata to make it paleo compliant!

Almond Dutch Baby – Great one pan breakfast!

Apple Leak Bacon Breakfast Sausage – I'd make this in big batches and freeze some for later!

Breakfast Meatloaf – This is another great big batch breakfast idea.

Easy Paleo Omelette Muffins- These are great breakfast on the go muffins!

 

Paleo Lunch Recipes:

Fiesta Chicken Salad – Peppers, shredded chicken (I'd use turkey), and avocado are in this paleo friendly chicken salad.

Lean Turkey Meatloaf Muffins –  These meatloaf muffins would make a great on the go lunch.

Chicken Burrito Bowls – Just skip the beans to be Paleo compliant!

Paleo Chicken Cutlets – I'll serve these along with a small salad, and make these turkey cutlets!

Cauliflower Fried Rice– You could eat this as a whole meal or a great side dish!

30 Minute Turkey and Kale Soup – I love recipes that are 30 minutes or less!

Paleo Snack Ideas:

Apple Cookies – Top with a nut butter (instead of peanut butter) and yum!

Carrot Fries with Curry Dipping Sauce– Carrots give these fries a little sweet zing!

Paleo Magic “Cookie” Bars– Growing up these were one of my favorite treats.

Easy Paleo Soft Pretzels –  These would be delicious topped with a little mustard.

Double Chocolate Zucchini Bread –  Perfect for a paleo compliant sweet treat!

Paleo Graham Bread – This would be delicious topped with a nut butter and fresh fruit.

Paleo Dinner Recipes:

Crockpot Sweet Potato Meatloaf – This is one of those tasty one-pot meals!

Proscuitto Wrapped Cod with Lemon Caper– Serve with a small side salad, and dinner is done!

Maple Walnut Crusted Salmon – Paired with steamed sweet potatoes for a complete meal.

Crockpot Pork with Apples and Onions–  Dump all the ingredients in your slow cooker, and dinner is done!

Slow Cooker Honey Lime Ginger Pork – This would be great on some paleo friendly tortillas.

Cranberry Maple Beef Roast– Cranberries aren't just for the holidays. This maple beef roast looks yum!

Turkey And Sweet Potato Hash Skillet– Great one pot meal. This could be a great side dish for breakfast or a great easy dinner!

Paleo Dessert Recipes:

Vegan Almond Butter Blondies–  These would be delicious topped with coconut ice cream.

Paleo Chocolate Chip Cookies – Just like grandma used to make only paleo!

Paleo Chocolate Pudding– This creamy chocolate pudding everyone is sure to love!
