Tattie Scones

A part of a traditional Scottish breakfast, these Tattie Scones are fluffy potato scones often served with sausage. An easy and delicious way to use leftover mashed potatoes.

Ingredients

  • 1 lb mashed potatoes about 4 large potatoes
  • 1/2 cup flour plus flour for dusting
  • 1/4 stick butter softened
  • 1/2 tsp kosher salt
  • 1 tsp baking powder

Instructions

  • Mix all ingredients together.
  • Split dough into 4 balls.
  • Roll one ball out to about 1/2 inch thick circle on a floured surface.
  • Cut into 4 equal wedges.
  • Repeat with each ball.
  • Heat griddle to medium-high. Cook on each side until lightly brown, about 5 minutes per side.
  • At this point, you can eat them as is, pop in the toaster, or fry them. You can also freeze them (with wax paper between them to avoid sticking) for later.

Notes

We prefer to fry them in a little bacon grease and eat them immediately.
