Avocado Egg

I picked up a few organic avocados at our local Aldi Supermarket, for only 99¢ each, and decided to get creative. I really wanted one for breakfast this morning, but didn't feel like just eating it plain, so I had fun with it!

I pitted it, then scooped out a little extra with a spoon, filled the hole with an egg and threw it in the oven at 350ºF for about 20 minutes. When the egg was fully cooked, I topped it with some cheese, chili pepper and garlic salt. I paired it with some peach slices, blueberries and cherry tomatoes, for one delicious and healthy breakfast! Even the kids enjoyed it, and they don't like avocado, so I call this a WIN!

This was a simple and fairly quick meal, that I am sure to make again!
