Avocado Egg Breakfast

This week, I tried to find a mix of our favorite recipes and some more kid-friendly recipes.  My nephew will be here for a couple days and he hasn't been exposed to a lot of healthy foods.  My boys on the other hand eat pretty much everything and normally choose a piece of fruit over junk food.  Trying to find a balance took some creative planning and after having made it through lunch today, a LOT of patience and perseverance on my part.  I am very glad I listened to my mother and exposed my boys to a wide variety of food at a young age, because starting later is headache inducing!

Breakfast Recipes:

Avocado Baked Eggs

Blueberry Muffins

Homemade Peach Poptarts

Breakfast Cookies

Steel-cut Oats (in the rice cooker)

Crispy Corned Beef Hash

Egg Breakfast Muffins (freezer-friendly)

Cheeseburger Poppers

Lunch Recipes:

Homemade Pizza Pockets

Beef Calzones

Homemade Cheeseburger Poppers

Fish & Chips with brown gravy

Turkey, Bacon, & Ranch Wraps

Chicken noodle soup (with leftover chicken from a roast) with bread & butter.

Taco salad

Banana Rollups

Snack Ideas:

Lady bugs (English muffin with pesto, tomato, mozzarella, and black olive)

Apples with peanut butter

Banana Roll-ups (trying with Nutella this time)

Scarecrow Mix

Apples with yogurt dip

Sausage & Cheese Pinwheels

Veggies & hummus
