Sweet potatoes Ground turkey Bell pepper Onion

Olive oil Salt Black pepper Cumin Chili powder Cilantro

INGREDIENTS

In a cast iron skillet, cook garlic and ground meat until cooked through.  Add in the onion, bell pepper, and spices, then cook for another 3 to 4 minutes.

STEP 1

Add the diced sweet potato and water, then cover and cook for an additional 6 to 8 minutes until the potato is tender.   Top with cheese if desired before serving.
