One-Pan  Taco Skillet in  30 Minutes

This easy summer meal brings together ground turkey, sweet potatoes, and warm spices for a simple dinner that’s full of flavor.

It comes together in just 30 minutes and always gets a thumbs-up from the whole family.

– Sweet potatoes – Ground turkey – Yellow bell pepper – Onion – Mozzarella, shredded – Water – Cilantro – Olive oil – Ground cumin – Garlic – Chili powder – Salt – Pepper

Ingredients:

In a large cast iron skillet, heat olive oil on medium-high.  Sauté garlic briefly, then add ground turkey, breaking it apart with a wooden spoon until browned.

Add cumin, chili powder, salt, and pepper. Stir well to incorporate.   Add onion and bell pepper, and cook until onion is translucent.

Put in the diced sweet potato and some water. Mix it up and cover the pan.  Let it cook for about 6-8 minutes until the sweet potatoes are soft.

Sprinkle some shredded mozzarella on top and let it melt.  Once done, take the skillet off the stove and top with fresh cilantro.
