Muffin Tin  Egg Bites

Always on the hunt for make-ahead breakfasts, these Muffin Tin Egg Bites have become my go-to.

They're hearty, scrumptious, loved by kids, and ideal for batch cooking and freezing for quick, effortless morning meals.

Peppers

Onions

Potato Slices

Salt & Pepper

Eggs

Cheese

Soften your potato slices & let cool.   In a mixing bowl, combine the remaining ingredients. Add the potatoes once cooled.

Fill each tin evenly, stirring the mixture before scooping each portion out.  Bake in preheated oven for 18-20 minutes or until the eggs are set and the top is golden brown.
