This creamy coleslaw is one of my favorite summer side dishes.  It goes great with cold sandwiches, fried chicken, barbeque, and Slow Cooker Root Beer Pulled Beef Sandwiches.  Plus, you don't have to heat up the house to make it!

INGREDIENTS

Cabbage (red or green) – CarrotsGreen Onion – Mayonnaise – Mustard – Pepper

1. Cut off the cabbage, leaving the core. 2. Slice on a mandolin slicer. 3. Julienne carrots. 4. Mix vegetables in a large bowl. 5. Add remaining ingredients and mix well. 6. Serve right away.
