Strawberry Banana Breakfast Quinoa
Do you love breakfast quinoa like I do? It is such a great hearty protein-packed breakfast that we all enjoy. This easy recipe for Strawberry Banana Breakfast Quinoa is a great dish that fits into many dietary needs. It's also just the right flavor to keep the kids happy!
Strawberry Banana Breakfast Quinoa
Many people just don't know what to do with quinoa. It is actually a seed but commonly referred to as a grain. It adapts easily to both sweet and savory recipes. This simple strawberry banana breakfast quinoa is a great example of how it creates a delicious hearty meal that is full of protein while remaining vegan & it's a great grain-free alternative for those following the Paleo diet.
We love the combination of strawberry and banana, especially in the summer. If oatmeal isn't on your diet plan, then quinoa is a great alternative that has a similar texture while offering more protein and lower carbohydrates. This has made the rise in popularity one we love to see.
Ingredients:
1/2 cup uncooked Quinoa
1 Banana, sliced
1/3 pound Strawberries, sliced
2 teaspoons Agave Nectar
2 teaspoons Sliced Almonds
Begin by rinsing your quinoa well. It can retain a bit of a bitter taste, so I like to soak the quinoa in a bowl of warm water before cooking. Like with many grains or beans, it is a great idea to rinse before cooking. Especially, if you buy in bulk. Small dirt and bits of rocks are often found in grains unless rinsed well, so this serves a dual purpose. It cleans and removes the bitterness.
Quinoa cooks much like rice. Bring to a boil, reduce the heat, and then cover and simmer for 15 minutes. Most of the liquid will be absorbed. If you want to impart more flavor, you can cook in a broth for savory, or a juice or unsweetened coconut milk for sweet dishes like this breakfast quinoa.
Remove the quinoa from the heat, and top with Agave nectar, bananas, strawberries, and almonds. You could also use a bit of honey, stevia, or even molasses to sweeten if preferred. We love a bit of cinnamon sprinkled into the quinoa as it cooks for even more flavor.
Ingredients
- 1/2 cup uncooked Quinoa
- 1 Banana sliced
- 1/3 lb Strawberries sliced
- 2 teaspoon Agave Nectar
- 2 teaspoon Sliced Almonds
Instructions
- Rinse Quinoa in a fine mesh strainer until water runs clear.
- Combine Quinoa and 1 cup water in a saucepan.
- Bring to a boil. Reduce heat, cover and simmer for 15 minutes or until most liquid is absorbed.
- Remove from heat and let stand covered 5 minutes.
- Transfer to bowls. Drizzle with agave and top with bananas, strawberries and almonds.
