Monday Meal Planning

Here's our first real menu planning post! I'm going to share with you my menu and my grocery list. I'll add links to any recipes I think you might be interested in, and as a bonus, I'm going to include my recipe for the sauce I use for one of the dishes on this week's menu!

Here's the menu for next week:

Notes – I'm going to roast two chickens on Monday – if I'm going to heat up the house for that long, I might as well get some leftovers out of it. I'll pick off the meat that's leftover and store it – and then cook the bones to make stock for the freezer. I'll use the leftover meat on Wednesday for the spicy chicken salad and again Friday for the pizza.

My list:

 

Notes: This is the list of stuff just to make the meals on the menu – I decided to spare you the list that includes diapers, tampons, Tide and my coffee obsession. You're welcome. I also make most of our bread, so I'll make the garlic knots from scratch, I have a couple boxes of the Jiffy pizza crust mix, so I'll just use those.

Slow Roasted Chicken

The Thai pizza is pretty easy, pizza crust, with a thai chili sauce on it instead of red sauce, then chicken, cheese, and baked – then I top with julienned carrots and cukes and some bean sprouts… then some peanuts. Easy peasy. You can buy the sauce, or make your own..

Thai Chili Sauce
1/4 cup soy sauce
1/4 cup honey
1/4 cup peanut butter
1/4 cup rice vinegar (plain white works too)
1 tsp minced garlic
sriracha to taste (lots if you're me!)

Mix it all together and taste it and adjust as needed… It's easier if you stick it in the microwave for 30 seconds to loosen up the peanut butter.

It's a combination of satay sauce and sweet chili sauce. I love them both so.. this is what I've come up with!

    I’m so excited about this blog! We have a lot in common- I make a menu (of mostly whole foods) and I make my grocery list to match. It helps us eat good and frugally!
