I am always looking for great breakfasts that are easy to make ahead of time and these Muffin Tin Egg Bites are a perfect choice. They are hearty, delicious, kid-friendly, and they are perfect for making large batches and freezing for super fast and easy breakfasts.

I have used a traditional muffin tin with no liners for this recipe as shown, but I highly recommend the use of a silicone muffin tin.  They are so easy to clean, and I never have a problem with anything sticking to them.

Directions for Making Omelette Muffins

Preheat oven to 400 degrees

Place the Simply Potatoes in a microwave-safe medium size bowl and cook for 4-5 minutes, stirring a few times.  If using fresh potatoes, you can follow the same method. You simply want them to be softened.

Let the potatoes cool for a few minutes. In a mixing bowl, combine the eggs and remaining ingredients. Once the potatoes are cool, add them to the egg mixture and combine.

Grease a 12-cup muffin pan with non-stick cooking spray.

Fill each tin evenly, stirring the mixture before scooping each portion out. This helps evenly distribute the beaten egg that accumulates at the bottom of the bowl.
