Preheat oven to 425.
Fry the bacon and let it cool.
Chop it into pieces and place in a bowl.
Pour the maple syrup over the top.
Keep the bacon grease. You might want to place it in the freezer for a few minutes to chill because you’ll need it for the biscuits.
Combine the dry ingredients in a large bowl.
Dice the butter into half inch cubes and add to the dry mixture, along with the chilled bacon drippings & shredded cheese
Combine until you have a crumbly mixture. You can use your hands, a fork, or a pastry cutter. Because your hands are warm and will melt the butter, it’s often better to use a pastry cutter or a fork.
Add the buttermilk and bacon syrup mixture. Combine.
Now you can roll your dough onto a well floured surface and use a biscuit cutter to make your biscuits, or you can make drop biscuits.
Bake for 12-14 minutes.
