Muffin Tin Egg Bites with Potato Slices

Ingredients

  • 20 ounce Simply Potatoes Homestyle slices ( or 2 1/2 cups potato slices)
  • 6 eggs beaten
  • 1 cup cheddar cheese grated
  • 1/2 cup bell pepper diced
  • 1/2 cup onion diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Preheat oven to 400 degrees
  • Place the Simply Potatoes in a microwave safe bowl and cook for 4-5 minutes, stirring a few times. If using fresh potatoes, you can follow the same method. You simply want them to be softened.
    20 ounce Simply Potatoes Homestyle slices
  • Let the potatoes cool for a few minutes and add them to a mixing bowl with all of the remaining ingredients.
    6 eggs
  • Grease a 12-cup muffin tin with non-stick cooking spray.
    1 cup cheddar cheese, 1/2 cup bell pepper, 1/2 cup onion, 1/2 teaspoon salt, 1/2 teaspoon pepper
  • Fill each tin evenly, stirring the mixture before scooping each portion out. This helps evenly distribute the beaten egg that accumulates at the bottom of the bowl.
  • Bake for 18-20 minutes or until the eggs are set and the top is golden brown. You can also take one out after 18 minutes and cut it in half to test it.
