Easy Chicken Salad with Lemon and Poppyseed

Ingredients

  • 3 Baked Grilled, or Rotisserie Chicken Breasts, Cubed
  • 1 Medium Green Apple Diced
  • 2-3 Green Onion Stalks Chopped
  • 1/4 c. Pecans Chopped
  • 1/2 c. Mayonnaise light
  • 1-1/2 T. Honey
  • 1-1/2 T. Lemon Juice
  • 1 T. Dijon Mustard
  • 1 t. Poppy Seeds
  • 1/2 t. Onion Powder
  • Pinch of Salt

Instructions

  • Mix mayonnaise, honey, lemon juice, Dijon mustard, poppy seeds, onion powder, and salt in a medium mixing bowl and stir to combine.
  • Add diced chicken, green apples, pecans, and green onions and stir to combine.
  • Serve on rolls or a bed of lettuce.
