Smoothies are always popular in our house.  Since I can prep many of the ingredients ahead of time into small freezer bags, it makes it simple to fix the kids breakfast in just a few minutes each day.  With this vanilla blueberry smoothie having such yummy flavors and that thickness of a milkshake, the kids never turn it down.

Vanilla Blueberry Smoothie Recipe

A bit of prep ahead of time makes a world of difference when making this recipe.  When you buy groceries, take the time when you get home to go ahead and clean your fruits and vegetables and portion them for use.  I love grabbing blueberries on sale and rinsing them well, patting dry, then bagging in the freezer for use in recipes.  If I have the bananas and spinach on hand, I will add them to the packet and label it for use in a smoothie.

Ingredients

1 pint fresh blueberries, washed and dried
1 banana
1 cup fresh spinach leaves, washed and dried
1 cup vanilla yogurt
1/4 cup coconut milk vanilla creamer
Sweetener of your choice, if desired

Instructions

Combine the coconut milk, blueberries, and spinach in your blender and blend until smooth.  There may be some bits of skin from the blueberries, but as long as they are small and the mixture is well blended, it will still come together nicely.

Add the yogurt and blend until smooth and frothy.  You can add some ice at this point for a colder and thicker smoothie, or even use a bit of cream or half and half for a slightly creamier texture and flavor.  If you are watching calories, you will likely skip the cream.

At this point, I taste to see if it needs sweetener added.  Some blueberries are sweeter than others, and if I use a riper banana I usually don't need any extra sweetener.  However, if you do sweeten, I suggest using some organic honey or perhaps stevia for a healthier alternative.

Serve immediately or store, covered in the refrigerator for up to 24 hours. Remember to shake or stir well before serving as it can separate a bit in the refrigerator.
