Pumpkin season is here and we’ve got a delicious recipe for you to try! These easy pumpkin bars are moist, flavorful, and so much better than the ones from your grocery store. They’re perfect for those rushed days when there doesn't seem to be time to cook anything complicated.

What Are Pumpkin Bars?

These delicious bars are made with pumpkin puree and are simple to prepare. They're baked in a baking pan and usually served with cream cheese icing. These cakes have a cakelike texture that's similar to that of pumpkin cakes and brownies combined. It's as if these incredible desserts worked together to produce the ideal pumpkin dessert bars. They are also called Pumpkin Spice Bars, when you use spice cake mix or add pumpkin pie spice.

Why These Pumpkin Cake Bars are Amazing

First of all, when it comes to dessert, it does not get easier than this one. It is just 2 ingredients and one bowl to make these bars. It takes no time to put together.

The flavor is absolutely amazing. The pumpkin really shines with the vanilla cake. There is just enough sweetness but it doesn't take over the flavor.

These bars are slightly healthier than most pumpkin dessert bars. There is no oil or other fats in this cake. While there is sugar, the pumpkin also adds nutrients and fiber.

Do These Bars Need To Be Refrigerated?

These fall dessert bars can be stored at room temperature as well as stored in the refrigerator. If you have put the cream cheese frosting on the cake bars then they will need to be refrigerated.

How Long Are Easy Pumpkin Bars Good For?

When the bars are stored in the refrigerator they will last for about a week. If they are stored at room temperature, the bars will be good for about 3 days. Make sure no matter how you store the bars that you store them in an airtight container. If the pumpkin dessert bars are not stored properly they will dry out.

Can You Freeze Pumpkin Bars?

You can absolutely freeze these pumpkin bars. They actually freeze really well. I like to portion the bars into 3 or 4 so that I can serve a few and bring out more when we want them.

Cut the dessert bars and then freeze them in separate bags. If you freeze the bars on a plate before moving them to the freezer bag, you do not have to worry about them freezing together. This makes it easy to remove them from the bag.

If you have frosted the pumpkin bars before freezing them, after they are frozen and stiff, wrap each one in plastic wrap. This keeps the frosting on the bars instead of the plastic wrap. Be sure to remove the plastic before it is thawed.

What size pan can you make these in?

You are going to bake these pumpkin bars according to the directions on the back of the box. The only difference is how it is prepared and what ingredients are in it. So you can pick several different size cake pans to bake these bars.

What kind of Frosting is Best for these Pumpkin Bars

I typically use a cream cheese frosting for these. It is a delicious combination and works perfectly with the pumpkin bars. You can add some variations to the frosting by adding caramel or other pumpkin flavors to it.

If you do not want to make a frosting, you can also make a cream cheese glaze to drizzle over the top.

If you want something even easier or even lighter, just do a dusting of powdered sugar over the top.

Ingredients

  • 1 box of yellow cake mix
  • 1 can of pure pumpkin (15 oz)

Instructions

  • Start by mixing together the cake mix & your can of pumpkin (do not add the oil & eggs listed on the cake mix – just the pumpkin).
  • You can add pumpkin pie spice, cinnamon, nutmeg, etc to spice it up.
  • Bake as directed on the cake box!
  • Remove them from the oven and allow to cool!
  • Cut your cake into squares and frost!

Notes

Enjoy with your favourite frosting. Cream cheese, powdered sugar, or even sweetened whipped cream are all delicious!
Substitute different cake mixes to find your perfect combination.
