Paleo Meal Plan Monday – Week of May 11th
Going Paleo doesn't have to mean eating the same things constantly or missing out on your favorite desserts. Â This week's Meal Plan Monday focuses on delicious Paleo recipes that will make your mouth water!
As always, I do a complete meal plan (Breakfast, Lunch, Snack ideas, Dinner, and a few desserts), so feel free to skip to the sections you plan.  I HIGHLY recommend PlanToEat.com (free 30-day trial) to compile your recipes for the week, adjust to the number of servings you need, and print your grocery list.
Paleo Breakfast Recipes:
Bacon & Sweet Potato Egg Bake – I might add a little goat's cheese to this, since I got the go-ahead on it from the doctor!
Blueberry, Peach, Kale, and Chia Smoothie – I'm still having iron issues, so the kale should help there.
Cinnamon Rolls Biscuits – So not my cinnamon rolls, but much better for me!
Strawberries & Cream Porridge – Because I miss warm cereal for breakfast!
Paleo Biscuits & Gravy – No need to skip this traditional breakfast anymore!
Asparagus Quiche with Spaghetti Squash Crust – Spaghetti Squash with a twist!
Paleo Porridge –Â So many topping possibilities here!
Paleo Lunch Recipes:
Cauliflower Crust Stromboli –Â We tried this a few weeks ago & are doing it again with pizza filling this time.
Broccoli Salad with Cashew Curry Dressing – Might top with grilled chicken breast
Stuffed Acorn Squash – Use almond cheese so it's Paleo approved
Â
Paleo Snack Ideas:
Sweet Cinnamon Graham Crackers
Apple slices with nut butter
Coconut Cream Pie Energy Bites
Salt & Vinegar Sweet Potato Chips
Paleo Dinner Recipes:
Baked Honey Salmon – This bakes in foil, so less mess!
Grilled steaks with veggies – We use this as a clean out the fridge day, so veggies vary
Chilean Salmon with Avocado Cream Sauce
Paleo Dessert Recipes:
Better than Box Brownies – I had to read the ingredients twice to make sure they were really Paleo!
Strawberry Rhubarb Swirl Ice Cream
