Paleo Meal Plan Monday – Week of February 1st

Meal planning is the number one way to take control of your budget and make sure you are eating a healthy diet, regardless of what types of food you are eating. Skip the last minute temptation to order pizza by planning everything out in advance, grocery shopping for only what you need, and then sticking to it!

Even if you aren't strict Paleo (or Paleo at all!), I can guarantee you will find some delicious recipes here to try out!  Unless you are vegan, then you might have an issue since we eat a lot of animal products in this house.  You might be interested in some of the smoothie recipes I share though, since I don't do dairy.

Paleo Meal Plan Monday

Before we jump straight into the delicious recipes, I wanted to share my definition of Paleo because I know there are so many different ideas on what it really means. Paleo to me means: No grains (which includes corn – no, it's not really a vegetable), no refined sugar (honey & molasses are okay in moderation), no soy, no legumes (which includes peanuts, but green beans & peas are fine), and no dairy. Veggies are the primary food group, meat, nuts & seeds, healthy fats, and fruit.  All REAL food that tastes delicious and fuels the body without causing inflammation.

Paleo Breakfast Recipes:

Baked Egg Nests – These are quick to whip up, easy to add your favorite veggies, and take with when you are in a rush.

Paleo Breakfast Sandwiches – The bread for this looks amazing! I'll have to play with it to come up with a recipe that doesn't involve almond though, so I can enjoy it with the kids.

Paleo “Oatmeal” – The name is a bit misleading since there aren't really any grains in it, but if you are craving oatmeal, this recipe sure hits the spot!

Chorizo Cauliflower Fried Rice – This looks like a fun and flavorful breakfast recipe!

Strawberry Mango Breakfast Shake – We are big fans of smoothies for breakfast and the combo of strawberry & mango sounds delicious!

Paleo Breakfast Burritos – I've done burritos wrapped in large leaf lettuce before, but these look tasty too!

Brussels Sprouts Breakfast Hash – Luckily all of my kids love brussels sprouts, so this should be a big hit!

Paleo Lunch Recipes:

Paleo Stuffed Avocados with Cilantro Cream Sauce – I'm doing these a little different this time. I'm stuffing them with beef taco meat and some diced tomato on top before drizzling on the sauce.

Crispy Buffalo Chicken Fingers – Serve these with Paleo ranch and some raw veggies for a complete dip-able lunch!

Subway-Style Sandwich – Just skip the cheese to be Paleo compliant!

Caramelized Onion Buffalo Meatballs – I'll serve these along with a small salad.

Chicken Broccoli Casserole – Going Paleo doesn't have to mean giving up your favorite casseroles, it just means tweaking them a bit!

Paleo Barbecue Beef & Bacon – This would be great over baked sweet potatoes too!

Chicken & Onion Tagine – Serve with some delicious cauliflower rice!

Paleo Snack Ideas:

Paleo Peach Coconut Smoothie – Serve this along with some breakfast sausage for a complete breakfast.

Strawberry Coconut Oil Bites – Her recipe is actually for raspberry but we really liked doing it with blueberries last time, so freeze-dried strawberries are being thrown in this time.

Tropical Fruit Leathers – This recipe lets you make fruit leather without a dehydrator using your favorite frozen fruit.  I'm going to use a bag of tropical mixed fruit!

Caprese Salad Bites – This uses avocado instead of the traditional mozzarella, but if you can tolerate dairy well, I'd try it both ways. Drizzle it with a little balsamic vinegar for a to-die-for snack!

Pineapple Lime Mint – 3 simple ingredients and you have a tasty snack!

Yummy Fruit Snacks – Make a large batch of these and throw the extras in the freezer for when you need them!

Apple slices with nut butter – Just use your favorite nut butter to dip apple slices!

Paleo Dinner Recipes:

Orange Mustard Glazed Salmon – Just try not to drool on your computer looking at this one!

Balsamic London Broil with Pan-Fried Zucchini Noodles – This is a filling meal on its own, but you could add some baked sweet potatoes for a side.

Cabbage Enchiladas – This would be good with leftover chicken or turkey from another meal!

The BOMB Paleo Chili – I might make up two batches of this.  One a little spicier and freeze the leftovers for another day.

Balsamic “Brown Sugar” Chicken – Use coconut sugar instead and serve with some steamed veggies!

Paleo Swedish Meatballs – Serve with mashed potatoes and a salad!

Crockpot Pork Loin with Apple Cider Gravy – This is an easy 5 ingredient meal.  Just switch out the cornstarch for arrowroot powder to keep it Paleo.

Paleo Dessert Recipes:

Paleo Raspberry Cheesecake – Oh, why do so many Paleo desserts use an almond crust?!? Off to develop an alternative for this one too!

Lemon Meringue Macaroons – A much lighter dessert than cheesecake, but just as delicious!

Baked Blueberries and Pears
