Paleo Meal Plan Monday

This week's Meal Plan Monday is all about Paleo breakfast, lunch, and snack ideas. 

We've made it through our first week back on Paleo & I have to say, it is SO much easier than AutoImmune Paleo when it comes to planning.  I'm still craving some really bad for me things, especially with it being Pumpkin Everything Season, but I'm working on gluten-free adaptations of my favorite recipes!  Here's our Paleo Meal Plan for this week!

Paleo Breakfast Recipes:

Bacon, Chive, & Sweet Potato Biscuits (These might end up being a weekly thing because we loved them!)

Green Eggs with chicken sausage

Canadian Bacon & Eggs

Pumpkin Porridge

Plantain Pancakes with Maple Coconut Cream

Sweet Potato Breakfast Skillet

Raspberry Poptarts (my kids are going to love me for this one!)

Paleo Lunch Recipes:

Pork & Apple Skewers

Paleo Chicken Salad Wraps

Roasted Butternut Squash Soup

BLT Lettuce Wraps (make a paleo mayo or other sauce for these)

Avocado Tuna Salad

Chorizo Stuffed Peppers

Coconut Chicken Nuggets with Paleo BBQ Sauce

Paleo Snack Ideas:

Veggie sticks with paleo ranch

Coconut Date Rolls

Nut Butter & Bananas

Apple Chips (I'll skip the sugar & maybe add some other spices)

Pumpkin Smoothies

Hardboiled eggs & cherry tomatoes

Bacon-wrapped dates
