Maple Bacon Biscuits Copycat Recipe

I'm pretty good at replicating a recipe I've had a few times, but trying to make something I've never had?  That's a bit of a challenge!  After hearing people raving about these Maple Bacon Biscuits from Ruby Tuesday, I really wanted to try one though!

Since I don't see myself visiting one anytime soon, I did the next best thing – headed to the internet to look for copycat recipes.  After reading through dozens of recipes, taking notes from the comments, and a lot of experimenting in the kitchen, and getting feedback from friends in other places around the country, I'm calling this one a success!

Ingredients

  • 5 slices bacon
  • ½ cup maple syrup
  • cups flour
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 stick butter 8 tablespoons
  • 2 cups shredded sharp cheddar
  • ½ cup buttermilk

Instructions

  • Preheat oven to 425.
  • Fry the bacon and let it cool.
  • Chop it into pieces and place in a bowl.
  • Pour the maple syrup over the top.
  • Keep the bacon grease. You might want to place it in the freezer for a few minutes to chill because you’ll need it for the biscuits.
  • Combine the dry ingredients in a large bowl.
  • Dice the butter into half inch cubes and add to the dry mixture, along with the chilled bacon drippings & shredded cheese
  • Combine until you have a crumbly mixture. You can use your hands, a fork, or a pastry cutter. Because your hands are warm and will melt the butter, it’s often better to use a pastry cutter or a fork.
  • Add the buttermilk and bacon syrup mixture. Combine.
  • Now you can roll your dough onto a well floured surface and use a biscuit cutter to make your biscuits, or you can make drop biscuits.
  • Bake for 12-14 minutes.
