I love Pico de Gallo to serve with many Mexican dishes and as a chip dip for the kiddos (removing the jalapenos seeds). Roma tomatoes are best for this, because of how easy it is to remove the seeds and they are less juicy than other varieties. Pico de gallo
- 5 ripe tomatoes
- 1 onion
- 2 jalapenos
- 1 tablespoon minced garlic
- Juice of 2 limes
- 1/2 cup cilantro plus extra for garnish
- Salt and pepper
Core & seed tomatoes.
Remove seeds (if desired) and dice jalapenos.
Roughly chop cilantro.
In a bowl combine all ingredients.
