Homemade Cheeseburger Poppers

I love convenience food, but we try to avoid all the preservatives and poor ingredients in them.  A favorite meal at our house is cheeseburgers and fries, but making the fries from scratch and trying to watch the stove with four little ones running around is normally pretty stressful.  Lately, I've been cutting up large batches of fries & freezing them to simplify it.  

After trying this recipe for homemade poppers done cheeseburger style, I'm going to have to make up a bunch for the boys to heat up for snacks or Fend for Yourself lunch.  These are so easy to throw together, especially if you use canned biscuits and frozen meatballs.

Ingredients

  • 1 can biscuits 10 ct or your own recipe
  • 10 pre-cooked meatballs
  • Sliced Cheese
  • Dill Pickle Slices
  • Mustard
  • Ketchup

Instructions

  • Preheat oven to 375 degrees.
  • Spray a small casserole dish or cookie sheet with non-stick spray and set aside.
  • On a cutting board or clean surface, flatten each canned biscuit out until around ¼” thick.
  • Squirt a small amount of both ketchup and mustard onto biscuit and spread covering most of dough.
  • Place ¼ slice cheese, small pickle and meatball onto dough.
  • Wrap biscuit dough around meatball pinching to seal.
  • Place “popper” onto cookie sheet or casserole with pinched side down.
  • Bake at 375 degrees for 10-12 minutes or until golden brown.
  • Serve with additional ketchup for dipping or as desired.
  • These freeze and reheat in microwave (45-60 seconds depending on microwave temps).
  • Enjoy!

  1. I’ve made these a few different ways and all were a success! My MIL doesn’t eat red meat or dairy, so I made them with turkey meatballs. I added in a dollop of relish and spicy mustard and she loved them!
