Spooky Black Bean and Sweet Potato Burritos

I love Halloween! I don't love all the junky food though… So here's a fun but REALLY healthy recipe that you can make and your kids will love. It's fairy inexpensive, too!

1 can black beans*
1/4 cup chicken broth (water or veggie broth is fine)
1 tsp cumin
1 tsp garlic powder
1/2 tsp black pepper
salt to taste
1 can PLAIN sweet potatoes* (not the Sugary Sam kind! You want 100% sweet potato)
2 tsp chile powder
2 tsp cinnamon
1 tsp black pepper
1/4 to 1/2 tsp cayenne (to taste, folks.. don't go crazy… you can also just add a couple dashes of your favorite hot sauce)
salt to taste
1 tbsp butter or olive oil
24 flour tortillas
1 cup of cheese

* You can use homemade black beans and just bake off a couple of sweet potatoes if you'd like. I use the canned because I can just keep them in the pantry for a quick and easy supper whenever. If I have fresh, I use fresh.

Preheat oven to 350.
To make the beans, drain and rinse the beans and then heat them in a skillet, with the broth, and stir in the spices. When the beans are hot, mash them, using a potato masher or a spoon. Mash them to a semi-smooth consistency, whatever texture you like in your refried beans and remove them from the heat.

For the potatoes, empty the can into a pot and heat them, stirring in the spices and the fat, for richness. Remove from heat and set aside.

To build the burritos, sprinkle some cheese over a tortilla and spread some of the sweet potato mixture on it. Layer a 2nd tortilla on top and spread the bean mixture on that. Roll up, and place seam side down on a cookie sheet. Repeat until you run out of filling. *

Bake at 350 for 5 minutes to melt cheese and enjoy!

* For an alternate method, leave out the 2nd tortilla – they're just as good, but not as pretty!
