Blackened Salmon with Pineapple Salsa Recipe

Trying to get more fish in your diet?  This Blackened Salmon with Pineapple Salsa recipe is an easy, delicious dinner your whole family will love. It only takes about 20 minutes to throw everything together, including cook time! You don't have to tell them  it's an omega-3 rich food or that the salsa is very healthy for them too! I'm a huge fan of easy recipes, and this one has quickly become a new favorite! The salsa can be whipped up in just a couple of minutes at the start of the week for convenience.

It's versatile and can be used with this blackened salmon recipe, with blackened chicken, grilled pork chops, or even as a side with chips. I'm determined to try making some sweet potato chips this week to pair with it, or perhaps use it in a taco salad. It would also be wonderful topped with this Avocado Mango Salsa!

Ingredients for Pineapple Salsa

Pineapple Salsa

This delicious Pineapple Salsa is great served with Blackened Salmon, Blackened Chicken, or by itself!

Ingredients

  • 1 whole or can in water or natural juices of pineapple
  • 20-30 Cherry tomatoes
  • 1 red onion
  • 2 avocados
  • 1 lime
  • 3-4 Jalapeños
  • 1 tablespoon of Balsamic Vinegar
  • salt and pepper to taste

Instructions

  • Remove the skin / rind and core of the pineapple. Chop the pineapple into small squares about 1/2 inch in diameter. Place in a medium sized bowl.
  • Dice the Jalapeños into very small bits. Larger if you can take the heat. Add to the pineapple
  • Dice the onion into small pieces and add to the bowl with the pineapple and Jalapeños.
  • Cherry tomatoes should be diced in 1/4's. Strain the juice from the cherry tomatoes to keep the salsa from not being runny.
  • Add 1/2 cup of lime juice to the mix
  • Top the salsa with 1 TBSP of Balsamic Vin. and a pinch of salt and pepper.

Ingredients

  • Tony Chachere's Creole seasoning
  • Olive oil spray
  • 4 Salmon filets

Instructions

  • Remove Salmon from packing and pat dry
  • Slice your 4 portions or however many you need place on a baking pan
  • Spray your salmon with Olive oil lightly
  • Generously sprinkle seasoning on top of the salmon.
  • Cook in a skillet for about 3 minutes (skin side down) then flip and cook another 3 minutes, or until your desired doneness is reached.

I love to do salmon on the grill whenever possible, but indoors I stick to either a cast iron skillet or a George Foreman Grill.  You can use whatever you have on hand, but I highly recommend investing in at least one of those for best results.

Blackened Salmon with Pineapple Salsa

Serve your blackened salmon with pineapple salsa, and some delicious veggies. It's great with steamed (or grilled) asparagus or a spinach salad.  I like my salsa on top, but the boys have to have it on the side.  Not sure why since they end up taking a bite of both at the same time though! Kids are silly like that, at least mine are!
